Saucy Chocolate Pudding
Oh my word how do I best to describe this saucy chocolate sponge pudding? Warm and comforting? Decadent? Deliciousness in a bowl? All of the above? Most definitely.
If you are beginning to detect a trend here you’re right. I love chocolate in all its forms and the fact that this one delivers on all its promise gives it a 5 star rating in my book. It doesn’t last long once it is out of the oven and if, on the rare occasion that it does, it is just as delicious cold as it is when it’s served steaming and piping hot straight from the oven. To try out the cold version you may need to resort to some subversive tactics and a hidden space in the fridge… I find the vegetable drawer works really well but sssh that would be telling.
I have eaten a version of this pudding which uses chocolate buttons or chips but they really aren’t necessary. Stir them into the mixture before placing it over the sauce and they will melt away as the pudding bakes.
You don’t need any fuss or frills with this pudding, it is brilliant just as it is. I note below in the recipe though that a spoon of vanilla ice-cream tips the scales on the side of awesome. However, this is not for the faint of heart and adds to the richness of the overall experience.
Speaking of the overall experience, this is most definitely not a scale-friendly recipe. In fact, avoid the scales for a few days after eating it. Far safer that way and I wouldn’t want to spoil it for you. So if you are having the same cold winter we are, go ahead and spoil yourself and your family.

Saucy Chocolate Pudding
Equipment
- 23cm round baking dish
- Measuring Spoons
- Measuring Cups
- Measuring Jug
- Large bowl for mixing
- Wooden spoon
- Sieve
Ingredients
- 1 cup flour
- 45 ml cocoa powder
- 3 ml salt
- 8 ml baking powder
- ½ cup sugar
- 5 ml vanilla essence
- 30 ml baking margarine, melted
- ¾ cup milk
Sauce:
- ½ cup sugar
- ¼ cup cocoa powder
- pinch of salt
- 400 ml boiling water
Instructions
- For the sauce combine all the ingredients together and pour into the 23cm round baking dish.
- For the sponge sift all dry ingredients and stir in the sugar.
- Mix all the liquid ingredients together and add to dry ingredients.
- Mix until well combined.
- Spoon the batter carefully over the chocolate sauce.
- Bake at 180°C for 40 minutes.
Notes
- This pudding is awesome served with some vanilla ice-cream.
