The kind of cookbooks I love to read (and I have a growing collection of them) are the ones where the author or chef writes a narrative or attachs some personal memories or associations to the recipe. Nigella Lawson immediately springs to mind. You know the recipe will be good but you get caught up in the story . She takes you on a journey. She will tell you a story about what the recipe means to her and her family, when they like to eat it and for what occasions. What Nigella does so well is paint a picture with words.
These brownies conjure up these kinds of images for me. As simple, quick and easy as the recipe may seem simple is very often best. This is so true, especially when you are in a hurry or a busy mom. These are the recipes which survive from generation to generation. Often in a stained cookbook or written on a card they are handed down from parents and grandparents. Tried and tested these recipes have a special place in our families hearts’.
This, the first recipe I am going to share with you on my blog, is just such a recipe. You will probably find many different variations of a chocolate fridge brownie in cookbooks compiled by home cooks over the years. This one though is from my family cookbook via a very good friend. Not only is it an absolute winner in my house, the kind where if you are polite you miss out, it is also the first recipe I added the to recipe book I have started for my daughter. My associations are therefore not only in the past but for the future as well.
It helps that my daughter is a keen baker and my son, well, he is a keen consumer. This does lead to endless fights as to who had the last piece, who had the most pieces, who had the biggest piece. Ella, as the baker believes it is her unassailable right to eat the lion’s share and Joshua takes his role as a taste tester very seriously.
Warning!
If the name Chocolate Fridge Brownie does not give it away, this recipe uses a lot of sugar. You’ll want to be careful with the little ones. To be honest, there is a limit to how many I can eat in one go, even after all these years of practice.

Chocolate Fridge Brownies
Equipment
- Mixer/hand beaters
- Wooden spoon essential for mixing the biscuit pieces into the mixture
- Food processor or 1 very enthusiastic kid
- Set of measuring spoons
- Kitchen scale
Ingredients
- 500 g salted butter/ baking margarine
- 500 g castor sugar
- 4 Tbsp cocoa powder
- 2 eggs
- 2 pkts Marie biscuits
Instructions
- Break biscuits into small pieces and set aside. The pieces must not be too big and also avoid crumbing the biscuits as this will be a disaster so blitz quickly in the food processor or keep an eye on the enthusiastic kitchen helper.
- Melt butter in a pot watching to see it doesn't catch.
- Add castor sugar and stir until dissolved (yes really).
- Add cocoa and stir in until mixed.
- Remove from the stove.
- Break 2 eggs into a cup or measuring jug so that they can be added quickly to the mixture.
- The mixture is still warm so beat it as you add the eggs to avoid the egg setting.
- Add broken pieces of biscuits and mix well to combine.
- Press into a greased pan and put in the fridge to set (this shouldn't take long)
