Chocolate Fridge Brownies

Quick and Easy dessert or sweet treat everyone loves!

Equipment

  • Mixer/hand beaters
  • Wooden spoon essential for mixing the biscuit pieces into the mixture
  • Food processor or 1 very enthusiastic kid
  • Set of measuring spoons
  • Kitchen scale

Ingredients
  

  • 500 g salted butter/ baking margarine
  • 500 g castor sugar
  • 4 Tbsp cocoa powder
  • 2 eggs
  • 2 pkts Marie biscuits

Instructions
 

  • Break biscuits into small pieces and set aside. The pieces must not be too big and also avoid crumbing the biscuits as this will be a disaster so blitz quickly in the food processor or keep an eye on the enthusiastic kitchen helper.
  • Melt butter in a pot watching to see it doesn't catch.
  • Add castor sugar and stir until dissolved (yes really).
  • Add cocoa and stir in until mixed.
  • Remove from the stove.
  • Break 2 eggs into a cup or measuring jug so that they can be added quickly to the mixture.
  • The mixture is still warm so beat it as you add the eggs to avoid the egg setting.
  • Add broken pieces of biscuits and mix well to combine.
  • Press into a greased pan and put in the fridge to set (this shouldn't take long)

Notes

You could add pieces of broken cherries or small marshmallows but not too many.
