Russian Squares

Delicious tea time treat

Equipment

  • 1 Large Saucepan
  • Measuring Cups
  • Measuring Spoons
  • 1 Bowl
  • Kitchen scale
  • Wooden spoon
  • Whisk or electric beaters
  • Wooden spoon

Ingredients
  

  • 250 g baking margarine
  • 1 cup sugar
  • 2 tbsp golden syrup
  • 2 cups dried fruit cake mix
  • 2 beaten eggs
  • 2 cups flour
  • 2 tsp baking powder
  • 2 cups icing sugar
  • 2 tbsp hot water
  • 1 tsp vanilla essence

Instructions
 

  • Melt margarine, sugar and syrup in the saucepan on the stove
  • Stir well until the mixture thickens. Rather do this slowly.
  • Allow to cool.
  • Add cake mix and stir well.
  • Add 2 beaten eggs, flour and baking powder and mix well
  • Pour into a greased pan and bake at 180°C for 20 minutes or until golden.
  • Make icing from icing sugar, hot water and vanilla essence.
  • Pour over the pan when it comes out of the oven and allow icing to set before cutting into squares.

Notes

  1. This time when I made the squares  I swopped out some 1/2 cup of the cake mix and added in cranberries. Dare I say divine.
